The title track of Jose Conde's first album of original music, Ay Que Rico is a Cuban son in style and rhythm (this style is what "salsa" is based on). The lyrics are a commentary on mom's cooking which he sings and expreses with the very Cuban phrase and inflection "ay! que rico" (it's so good!). This song has been heard in the award winning PBS documentary "90 Miles" by Juan Carlos Zaldivar and is also on the 2009 Putumayo compilation "SALSA". "It was the first real breakthrough for me in writing in the Cuban son style. It was also the first son arrangement I worked on (for nonet) and in this case it was a collaboration with Pablo Moya" But really it was easy because of the inspiration of the thought of arriving home to smell the aroma of black beans or roast suckling pig, or arroz con pollo....mom's cooking engulfing the house. AY! QUE RICO. Enjoy! Jose Conde
lyrics
AY! QUE RICO - JOSE CONDE
Mi Mama es la major cocinera
De la Habana a la sawesera
Cuando yo huelo ese sofrito
Yo se que viene algo muy rico
Ay! Que rico, que rico
Como cocina mama
Ay! Que rico, que rico
Como cocina mama
Ahora que soy hombre casero
Mi chinita no cocina tan bueno
Pero ella cocina de otra manera
Apaga la luz y enciende la vela
Ay! Que rico, que rico
Como cocina mama
Ay! Que rico, que rico
Como cocina mama
Comida criolla
Empieza con cebolla
Ajo y aji
Sabrosito para ti
Tira todo los frijolitos
Ya cuando esten blandito
Pimienta ,sal , y comino
Un pizquito
Yo te invito
A comer un poquito
de lo que cocina mama
AY QUE RICO – ENGLISH Translation
My mom is the best cook
From Havana to the southwest
When I smell that sofrito (stir fry base)
I know somethings comin that’s good
Ooh its so good , its so good
That cookin mama
Ooh its so good , its so good
Oh that cookin mama
Now that I am a grown man
My girl doesn’t cook so well
But she cooks in other ways
Turn off the lights
And light the candles
Ooh its so good , its so good
That cookin mama
Ooh its so good , its so good
Oh that cookin mama
Cuban cooking
Begins with Sofrito -- onion
Garlic and peppers
Heat the oil and start to fry
Throw in all the black beans
Then when they start to soften
Black pepper, salt and cumin
Just a pinch
Serve with rice, yucca, and mojitos
I invite you
To taste just a bit
Of whats cooking here with mama
